an abundance of mushrooms led to this menu:
tom kha soup: coconut, lemongrass, mushroom, onions, rice, cilantro
fruit spinach salad: spinach, mandarin, poached pear, glazed walnuts, feta cheese, italian dressing...a killer combo
homemade mushroom alfredo sauce with veggie noodles and blanched spinach
mushroom quice in a sweet crust
sauteed banana with french vanilla ice cream and a toffee bar sliver
and we still have mushrooms!
we had mushroom soup, a quice, and crepes earlier this week too! and mushrooms on a frozen pizza......
can't forget about the cream cheese stuffed mushrooms. and the grilled cheese with mushrooms.
i'm thinking mushroom tempura is next....
